Dining at the Chimneys Inn

The Chimneys Inn offers a menu unique to the Miami Valley. Our Contemporary Southern Fare includes Cajun and Creole, Barbeque, Tex-Mex and Southern Metro fusion dishes. Take a glance at our menu and you can see the inspired and eclectic style of Matthew Hayden, Executive Chef of The Chimneys.

We do not boil, bake or grill our barbecue meats. We use commercial smokers with wild cherry wood and hickory that imparts a mild, smoky taste to the meat. We are able to closely control the temperature, humidity and time, which produce a high quality product. We use only proprietary scratch recipe seasoning rubs, mops and BBQ sauces which reflect regional tastes of varying sweetness, smokiness, spiciness and indigenous flavor bases, such as mustard, vinegar, Mexican chilis, etc...

Our Cajun and Creole fare is second to none in Dayton. Our meticulous observance of quality products and authentic preparations are homage to the great cuisine of Louisiana. Our unique classification of “Southern Metro” allows chef Matthew Hayden to explore ethnic and regional culinary boundaries while remaining sensitive to the tastes of his discriminating guests.
